Rhubarb and Strawberry Pie!!

Rhubarb and Strawberry Pie
Ingredients (use vegan versions):
3 cups sliced rhubarb (cut pieces about 1/4 wide)
3 cups sliced strawberries
1/2 cup to 3/4 cup sugar (depending on how sweet you like your pies)
1 1/2 tablespoons instant tapioca
1/3 to 1/2 cup orange juice
1/4 teaspoon grated orange peel
2 count 9 inch pie crusts (check ingredients)
a little bit of soy margarine (not completely necessary, but it improves the pie a bit)



Directions:

1. Combine all ingredients except pie crusts and margarine in a bowl and let sit for 10 minutes.

2. Pour the ingredients into one of the crusts.

3. Roll out other crust flat and cut it into strips over floured board with floured rolling pin. Dot top of filling with margarine (if you're leaving out the margarine, then just don't do that part), then place the strips of pastry on top in a "criss-cross" or "basket weave" format. OR Roll out other crust flat over floured board with floured rolling pin. Dot top of filling with margarine (if you're leaving out hte margarine, then just don't do that part), then lay the rolled out pastry on top. Slash the top with two cuts, making a cross shape (this allows steam to escape).

4. Bake for 20 minutes at 400 degrees F, then reduce heat to 375 degrees F, and bake another 30 minutes.

5. Let cool 20 minutes or more, then enjoy!

Preparation time: prep: 40 min. Baking: 50 min., Cooling time: 20 min.

Fried "Chicken"

I borrowed this Recipe from VegWeb My new favorite recipe place!!! I miss the taste of greasy fried chicken...as gross as that may seem to some of you. This is really good!

Fried "Chicken"
Ingredients (use vegan versions):
1 pound seitan (use Quick Seitan recipe from this web site)
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon pepper
cayenne (optional)
2 cup unbleached flour (use white if you want a traditional feel)
4 tablespoons nutritional yeast (gives color and flavor)
3 tablespoons yellow mustard (or spicy mustard if you dare!)
2 teaspoons baking powder
1 tablespoon garlic powder optional
1/2 cup water
3 1/2 cup vegetable oil
Directions:
This is junk food of the vegan gods.

Make your seitan according to directions, molding into "strips". When all done and cooled, cut into smaller strips.

Mix together salt, onion, pepper, cayenne, nutritional. yeast, baking powder and garlic powder in a pie plate or wide bowl. In a second bowl, mix water, mustard and 1/3 cup of the flour. Add the rest of the flour to the seasonings bowl.

Heat the oil in a deep fry pan or skillet. Coat a "strip" with the mustard batter and then dip into the flour mixture (crust). Place carefully into hot oil, and fry on both sides until crispy and golden.

Nutritional information: not very healthy when it hits the pan.

Serves: 4

Pasta tomato




Look at this little lady...My very first tomato in the garden, in honor of her, lets try this yummy pasta recipe:

1 can sliced black olives
2cans chopped tomatoes(or fresh)
8oz whole wheat pasta (cooked/drained)
tsp oregeno
tsp garlic powder
tsp italian seasoning
enough EEO to coat pasta
salt and pepper to taste.
Mix all together in big bowl an eat it up! Yummy warm or cold!

Strawberry Shake

1 cup fresh or frozen strawberries
2 cups soymilk
1/2 cup powdered soymilk
1 cup crushed ice
(if using fresh fruit)
two fresh strawberries and mint leaves for garnish
blend all ingredients well. Garnish with a fresh strawberry and mint leaf.
